That’s one of those things which Italians do better: the machines for industrial ice cream and especially those for handcrafted ice-cream.
These machines are very different from each other: those for industrial ice-cream are real lines formed by many steps, in which the ice cream is first formed by molds or placed in trays and then passed through refrigerating cells which freeze it and prepare it for canning.
Handcrafted ice-cream machines have to be small and simple, since every ice-cream shop must have at least one in its back; they are mainly used to mix and refrigerate to a turn all the ingredients which the ice-cream maker will load in the appropriate containers.
